Herbed Muffins


INGREDIENTS
Whole wheat flour 360 gm
Flour 150 gm
Eggs 4 
Buttermilk 2 cup 
Baking powder 4 tsp
Baking soda 1 tsp
Salt 1 tsp
Garlic chives 6 tbsp
Rosemary 2 tbsp
Honey 4 tbsp
Olive oil 1 cup
Cheddar shredded cheese 3 cups

DIRECTIONS

  1. Preheat oven to 400?F (200?C).
  2. Line 10 standard muffin tin with paper.
  3. Now set aside.
  4. Now in a bowl stir together flour, whole wheat flour, baking powder, baking soda, salt, chives and then rosemary.
  5. Now add 2 cups cheddar cheese from the total of 3 cups.
  6. Reserve 1/2 cup of cheese set aside.
  7. In a small bowl whisk together the eggs until blended, and then stir in buttermilk, honey and then olive oil
  8. Pour over dry ingredients and then stir just until moistened.
  9. Now sprinkle with cheddar cheese evenly over the tops.
  10. Bake in preheated oven for 18 minutes or until tester inserted in middle comes out clean.
  11. Let cool in pan on wire rack for 10 minutes, now turn out onto rack.
  12. Serve warm.
