Italian Ministra Soup


INGREDIENTS:
Tomato 500 gm
Onion 2
Garlic 6 clove
Celery 1 cup
Leek 1 cup
Basil 10 leaves
Tomato paste 2 tbsp
Oil 4 tbsp
Oregano 1/2 tsp
Black pepper to taste
Salt to taste
DIRECTIONS:

  1. Peel and mash tomatoes.
  2. Chop onion, celery, leek and take a medium size cooking pot.
  3. Put cooking oil, let the oil get hot, add chopped onion saute and add garlic cloves, finely chopped and then saute for a couple of minutes.
  4. Now add a half cup chopped celery, leek chopped mashed tomatoes basil leaves oregano, tomato paste, salt and black pepper sauté them for a couple of minutes.
  5. Now add 1-liter water let it boil for 1 hour at medium flame till the soup is ready.
  6. Serve Hot.
