Schezwan Sauce


INGREDIENTS
Dried red chilies 6-7
Oil 3 tbsp
Soya sauce 1 tsp
Chili sauce 2 tsp
Garlic 3 tbsp
Ginger ½ tsp
Salt ½ tsp
White pepper ½ tsp
Sugar ½ tsp
Vinegar 1 tsp

DIRECTIONS

  1. Soak Kashmiri chilies in water discard seeds and grind to make a smooth paste.
  2. Heat oil in frying pan and then add garlic and ginger paste and saute.
  3. Now add chili paste fry well till smell removes.
  4. Add salt, white pepper, chili sauce and soya sauce fry more for 5 minutes.
  5. Now add 1 cup of water and adjust thick consistency.
  6. Add vinegar and sugar mix well and remove.
  7. Let cool and fill into a jar and refrigerate.
