Soft Maple Caramels with Sea Salt


INGREDIENTS
Maple Syrup 12 tbsp
Golden Syrup 12 tbsp
Caster Sugar 36 tbsp or 500 gm
Sea salt 2 tsp
Butter 4 tbsp or 100 gm
Double Cream 350 ml
Vanilla extracts 2 tsp

DIRECTIONS

  1. Take a pan put cream, 2 tbsp butter a pinch of salt and then add vanilla extract heat and bring boil in it do not overcook just remove and then set aside.
  2. Now in another pan put sugar, maple syrup and golden syrup and then let melt sugar. Now shake pan but don’t stir spoon melt sugar till hard crack stage at 150C.
  3. Remove pan from stove and then add cream mixture heat till 125 C now it’s hard ball stage.
  4. Now add remaining 2 tbsp butter mix well and pour it into greased tin pan allow to firm little add then salt sprinkling over cool completely.
  5. Cut squares with the help of a sharp knife and enjoy it.
