Chinese Egg Fried Rice


INGREDIENTS
Basmati Rice 2 kg (washed and soaked for 20 minutes)
Eggs 8 (whisk with a pinch of yellow color)
Spring onions 2 cup (finely sliced tops or green leaves)
Carrots 6 (finely sliced)
Bell pepper 4 (finely sliced)
Garlic water/essence 4 tbsp
Soya sauce 4 tbsp
White vinegar 2 tbsp
Black pepper 1 tsp (ground)
Sugar 2 tsp
Ajinomoto 1 tsp (Chinese Salt)
Salt To taste
Cinnamon 2 piece roasted and ground
Oil 2 cup
Sesame oil a few drops

DIRECTIONS

  1. Boil water in the pan then adds rice, 2 tbsp salt, and vinegar. Now boil rice until 75% done.
  2. Drain the water and simmer rice on low heat for 5 minutes.
  3. Now remove rice from heat and spread in wide dish.
  4. When you wish to serve, add the little amount of oil to a wok or pot and then heat.
  5. Then add the garlic water/essence then the eggs and stir it quickly.
  6. Now add the soy sauce, black pepper, bell pepper, carrots and green onions.
  7. Then stir fry for 5 minutes and add in the rice.
  8. Add in the sugar, a bit of the soy rice and Ajinomoto and toss gently with 4 spoons.
  9. The Egg Fried Rice is now ready and add a few drops of sesame oil on top.
  10. Serve with Chicken Chilies.
