Hazelnut Fish & Chips


INGREDIENTS
Mayonnaise 2 cup
Orange juice 1/2 cup
Vinegar 2 tbsp
Thyme leaves 2 tsp (dried)
Fresh garlic 1/2 tsp (minced)
Salt to taste
For Sweet Potato Fries
Orange juice 6 tbsp
Thyme leaves 3 tsp (dried)
Salt 1 tsp
Black pepper powder 1/2 tsp
Sweet potato 1000g
For Hazelnut Coated Fish
All purpose flour 1 cup
Salt 2 tsp
Black pepper powder 1 tsp
Egg whites 4
Water 4 tbsp
Toasted hazelnut 2 cup (finely chopped)
Fish fillet 1000g
Vegetable oil 2 tbsp

DIRECTIONS

  1. Blend all ingredients until puree.
  2. Now preheat oven to 400°F. Then mix orange juice, thyme, salt and pepper in shallow pan; and set aside.
  3. Now cut sweet potatoes lengthwise into small strips. Then toss with orange juice mixture to coat. Now bake on prepared baking sheet at 400°F for 13 to 15 minutes per side, then turning once, until browned.
  4. Combine all purpose flour, salt and pepper in a bowl; and set aside.
  5. Beat eggs whites and then water in bowl; keep aside.
  6. Now place hazelnuts in bowl; and set aside.
  7. Rinse fish and then pat dry. Now coat fish in flour mixture, dip fish in egg white mixture. Then coat in hazelnuts, pressing nuts onto fish to coat.
  8. Preheat 2 tablespoon oil in large ovenproof pan over medium high heat.
  9. Add fish and fry 5 minutes until browned on bottom.
  10. Turn the fish and place pan in oven. Bake at 400°F for 10 minutes per 1-inch thickness of fish until flakey.
  11. Serve with sweet potato fries and dipping sauce.
